Joe’s Special

An older post, but it gives credit to a local Seattle gal, Joey, so happy to dig it up!

I grew up on this stuff at home and many diners/restaurants list this on their menus under the name “Joe’s Special”.

Cakewalk-simple and quick to make in huge batches which is always a great thing!

Here’s how Joey did hers (Paleo-style):

I prefer to use 25%+ fat beef and add bacon chunks and a bit of parmasean for a bit more of a full flavor… plus it makes the tank feel full faster, so you need less fuel overall.

  1. YUM! Gotta say, I will be trying this in the next couple of days! Oh and I’ve been loving your cover photos when I come to your site. Meat, Butter, Bacon – doesn’t get better than that 🙂

    • The kinda stuff that makes you drool thinking about it AND keeps you full for hours: that’s what LCHF is all about – replacing the starches, pastas, and grains with the meats, cheeses, creams, butters… win-win-win!!
